"Participants will be certified as food protection managers using course materials from the Educational Foundation of the National Restaurant Association," said Libby Hoyle, Clemson Extension nutritionist and food safety specialist. The course is designed for food safety educators, restaurant managers, restaurant food inspectors, culinary arts teachers, chefs, grocery store deli managers and those in related food service industries such as food distribution centers. "Participants will also complete a train-the-trainer program so that they will be able to train food service employees using materials developed by Clemson University especially for food handlers in South Carolina," Hoyle said. Class size is limited to 35, and the cost is $150, which includes the course book, training materials, a thermometer, a guide for teaching the employee's course, breaks and two lunches.
